Picky eating can be from nervousness around new foods, a heightened sense of sensory and a lack of exposure. All are reasons for children to shy away from new foods.
Kids are naturally curious and if you can connect with them based on their curiosity during a non-mealtime it will remove a lot of the pressures to eat the food. Without pressure kids will be curious to explore foods with their fingers or their mouths. I was a child with food sensitivities, and it took me years to eat certain foods. It was with repeated exposure to unfamiliar foods that ultimately led me to trying new things. In my kids cooking classes I allow children to work with foods without the pressure of eating them.
